Finely mince scallion and onion. Mix with soy sauce, chili flakes, garlic, sesame oil, and sesame seeds into a thick seasoning.
In a wide shallow pot, stack 4 to 5 leaves at a time and brush each layer with 1/2 teaspoon seasoning.
Pour 3 tablespoons water around the pot edge, not over the leaves. Cover and steam over medium-low heat for 4 to 5 minutes.
Turn off the heat, uncover, rest 1 minute, then transfer with tongs or chopsticks.
🌟 Pro Chef Tips
- • A thin coating on each leaf plus three tablespoons of edge water is the key to even flavor and a clean perilla aroma.
⚠️ Avoid Common Pitfalls
- ❌ If it tastes too salty, add 1 tablespoon hot water around the edge and steam 30 seconds more to soften the seasoning.
- ❌ If the leaf edges are tough, keep medium-low heat and reduce steaming time to 4 minutes next time.
🧊 Storage & Reheating Advice
Store leftovers in an airtight container in the refrigerator for up to 2 days. To reheat, warm over low heat in a skillet with a tiny dab of fresh butter to restore full aroma.
