Cool Leftover Rice Quickly in Shallow Portions
Should leftover rice cool completely before refrigeration?

- Hot food may be placed directly in the refrigerator.
Why it matters
Leaving leftover rice at room temperature until it feels completely cool is not the safe approach. USDA FSIS advises refrigerating cooked leftovers within two hours, or within one hour when the air temperature is above 90°F (32°C).
How to apply it
A large bowl or deep pot cools slowly at the center. Dividing rice into shallow, single-meal containers helps it reach refrigerator temperature more quickly.
Final check
Hot food may go directly into the refrigerator. Split large amounts among several shallow containers, and discard rice left at room temperature beyond the time limit even if it looks or smells normal.
