Three things to remember

  • Use an appliance thermometer to keep the refrigerator at 40°F / 4°C or below, and leave room for cold air to circulate.
  • Keep eggs in their carton in the main compartment, and seal raw meat away from ready-to-eat foods.
  • Refrigerate leftovers in shallow covered containers and generally use them within three to four days.

Why it matters

FDA recommends keeping the refrigerator at 40°F / 4°C or below and the freezer at 0°F / -18°C, verified with an appliance thermometer. Avoid overpacking so cold air can circulate.

How to apply it

Keep eggs in their original carton in the refrigerator’s main compartment rather than the door, where temperatures are warmer and less stable. Milk also benefits from a stable interior shelf.

How to apply it

Place raw meat, poultry, and seafood in leakproof containers and separate them from other foods, especially ready-to-eat items. Containing drips matters more than claiming one shelf is universally coldest.

Final check

Divide leftovers into shallow covered containers for quicker chilling. FoodSafety.gov generally lists three to four refrigerated days for cooked meat or poultry, soups, and stews. Appearance and smell alone cannot establish safety.
