- Marinate meat and poultry in the refrigerator at 40°F / 4°C or below.
- Reserve a clean sauce portion before raw meat touches the marinade.
- Boil raw-contact marinade for several minutes before any reuse.
Why it matters
Acid and salt in a marinade do not make raw meat microbiologically safe. FDA and USDA FSIS advise marinating in the refrigerator, not on the counter.
How to apply it
The simplest way to make a serving sauce is to reserve some clean marinade before adding raw meat. If raw-contact marinade must be reused, bring it to a full boil for several minutes first.
How to apply it
USDA says chicken may be marinated in the refrigerator for up to two days. Six to 24 hours is common for many recipes, while more than two days in an acidic marinade can make meat mushy.
Final check
Do not move cooked food with unwashed tongs or onto a plate that held raw meat. Marinade color cannot confirm doneness, so check the safe internal temperature with a food thermometer.
