👨🍳 Cooking Steps
Scrub 300 g burdock under running water and peel it thinly. Cut into fine 5 cm matchsticks and soak in cold water for 5 minutes.
Drain the burdock in a colander. Add it to a pan with 250 ml water, 2 tbsp soy sauce, 1 tbsp rice wine, and 1 tbsp sugar; simmer over medium heat for 10 minutes.
When about half the liquid remains, turn the strands with a wooden spatula, stir in the remaining 1 tbsp soy sauce, and reduce over medium-low heat for 5 minutes.
When almost no liquid remains, add 1 tbsp rice syrup and toss over low heat for 2 minutes until glossy. Turn off the heat and stir in 1 tsp sesame oil.
Let the burdock cool briefly, transfer to a side-dish bowl, and sprinkle with 1 tsp toasted sesame seeds.
🌟 Pro Chef Tips
- • Soak burdock as soon as it is cut to reduce browning and astringency.
- • Add rice syrup at the end so the glaze does not scorch and stays shiny on thin strands.
⚠️ Avoid Common Pitfalls
- ❌ If it is too salty, add 2 tbsp hot water and toss over low heat for 1 minute to loosen the glaze.
- ❌ If burdock is tough, add 3 tbsp water, cover, cook 3 more minutes over medium-low heat, then reduce again.
🧊 Storage & Reheating Advice
Store leftovers in an airtight container in the refrigerator for up to 2 days. To reheat, warm over low heat in a skillet with a tiny dab of fresh butter to restore full aroma.
