  • Onion1
  • Scallions2 stalks
  • Red or spicy green chili1

🥣 Sauce & Seasoning

  • Minced garlic4 tbsp
  • Minced ginger½ tbsp
  • Sugar½ cup (100 ml)
  • Dark soy sauce1 cup (200 ml)
  • Tuna fish sauce3 tbsp
  • Mirin1 cup (200 ml)
  • Vinegar5 tbsp
  • Korean pear drink1 can (238 ml)
  • Water800 ml
  • Cooking oil2 generous turns

👨‍🍳 Cooking Steps

1

Soak the ribs in cold water for 2 hours, changing the water once or twice.

2

Cut radish into 3 cm chunks and roughly chop the onion and scallions.

3

Heat oil in a wide pot, cook onion and scallion, then add sugar and let it dissolve.

4

Add soy sauce, fish sauce, mirin, vinegar, pear drink, garlic, and ginger; bring to a boil.

5

Add drained ribs and 800 ml water. Once boiling, skim off the foam.

6

Cover and simmer over medium-low heat for 40 minutes, turning once with tongs.

7

Add radish and simmer for about 30 minutes more until both ribs and radish are tender.

8

Uncover, baste with the sauce, and reduce for 10–15 minutes to the desired gloss.

9

Finish with chili and sliced scallion, then serve hot with rice.

🌟 Pro Chef Tips

  • • Use a wide, deep pot so the ribs stay mostly submerged.
  • • The sauce concentrates quickly at the end, so lower the heat as it becomes glossy.

⚠️ Avoid Common Pitfalls

  • ❌ Insufficient soaking can make the braising liquid cloudy.
  • ❌ A long hard boil can make the outside salty before the meat becomes tender.

🧊 Storage & Reheating Advice

Store leftovers in an airtight container in the refrigerator for up to 2 days. To reheat, warm over low heat in a skillet with a tiny dab of fresh butter to restore full aroma.
